Sorbetto alle Fragole - Strawberry Sorbet


I always add a tablespoon of whisked egg white to my sorbetto, no more than that. It is enough to make it smooth and creamy like an ice cream, without leaving any trace of egg flavour.




I buy my strawberries at the vegetable market, as there I get the ripe ones for a good price.

Sorbetto alle Fragole - Strawberry Sorbet

500 g strawberries
1 tablespoon of fresh lemon juice
200 ml water
150 g caster sugar
1 tablespoon of egg white


Serves 6 to 8

Preparation time: 4o minutes
Cooking time: 5 minutes

  1. Combine sugar and water in a saucepan. Heat gently until the sugar dissolves, then leave to a simmer for 5 minutes. Remove from the heat and leave to cool. 
  2. Meanwhile, put the strawberries in a blender with the lemon juice and purée until smooth. Add the cooled syrup to the purée and whisk together. 
  3. Whisk the egg white and combine 1 tablespoon with the strawberry mixture. 
  4. Pour the mixture into an ice cream maker. 
  5. Process for about 20 to 30 minutes, according to the manufacturer's instructions. 
  6. Freeze.
