Torta di mele in padella - Frying-pan Apple Cake


Softener than a pan cake, quicker than an apple cake, the frying- pan apple cake is easy to make at any time of the day. The children would enjoy both the making and the tasting.



No fuss apple cake: you should have all the ingredient in your kitchen.


Starting point: zesting the lemon.


Peel, core and grate the apples; leave to marinate in a bowl with the lemon juice.


Beat the eggs and the sugar until pale and fluffy. Add the milk and the melted butter and slowly mix in the flour and the baking powder. Finally stir in the grated apples.


 In a deep frying pan (22 cm diameter) heat a knob of butter and ad your mixture. 


Cook on low heat with lid for 15 minutes. Turn it on the other side with the help of a flat lid larger than the pan (as if it were a frittata) and cook for another 5 minutes on medium heat.
Serve at once with honey and icing sugar on top.

1 unwaxed lemon, zest and juice
2 large apples (g 300)
70 g caster sugar
2 large eggs
20 g melted butter
20 ml milk
130 g plain white flour
1 and ½ teaspoons baking powder
20 g butter to grease the pan
2 tablespoons running honey
1 teaspoon icing sugar


Serves 4 to 6
Preparation time: 15 minutes
Cooking time: 20 minutes


1. Zest and squeeze the lemon. Set aside zest and juice.

2. Peel, core and grate the apples.

3. Place the apple in a bowl and stir in the lemon’s juice and the zest.


4. Melt the butter and leave to cool.

5. In a large bowl, beat the eggs with the sugar until pale and fluffy, 5 minutes.

6. Stir in the milk, the butter, the flour and the baking powder and mix through.

7. Add the apples and combine.

8. In a non-stick frying pan (22 cm diameter, deep) heat 10 g of butter and add the apple mixture.

9. Cook for 15 minutes on low heat with the lid on. With the help of a large lid, turn the cake and cook it in the remaining butter for 5 minutes.

10. Place the cake on a serving dish, drizzle with honey and sprinkle with icing sugar.

11. Serve at once.
